Ingredients

  • 285 grams / 10 oz plain flour

  • 1 tsp bicarbonate of soda

  • 1/2 tsp salt

  • 110 g/ 4 oz butter

  • 225 g/ 8 oz caster sugar

  • 2 free range eggs

  • 4 ripe bananas, mashed

  • 85 ml / 3 fl oz buttermilk

  • 1 tsp vanilla extract

Method

  1. Grab a piece of butter. Grab the sugar and cream them together.

  2. When the butter and sugar are creamed, put in the milk, eggs (you crack the eggs first) plus the smashed bananas and the vanilla extract.

  3. In a separate mixing bowl, mix the plain flour, bicarbonate of soda and salt together.

  4. Slowly pour the dry ingredients into the wet ingredients while folding the mixture.

  5. Pour the banana bread mixture into a greased bread tin.

  6. Put in the oven carefully at 180 degress Celsius and bake for an hour.

  7. Once the bread is cooked, take out of the oven and cool completely.
